Olive oil cake
1 1/2 cups Sitia Extra Virgin Olive Oil 1 1/2 cups sugar 4 eggs 1 cup milk 2 teaspoons baking powder juice and zest of 1 lemon 1 teaspoon baking soda 1 tablespoon ground cinnamon and clove 3 1/2 cups all purpose flourPreheat oven to 350° F.
In a large bowl, beat the olive oil and sugar and continue by adding the egg yolks, cinnamon and clove powder, lemon zest, baking soda diluted in the lemon juice, baking powder diluted in milk, flour and finally the egg whites which have been beaten stiff. Pour the mixture in an oiled baking pan and bake it for about an hour.
