Walnut cake

1 cup Sitia Extra Virgin Olive Oil
1 cup walnuts, coarsely ground
1 cup sugar
6 eggs
1 cup milk
1 tablespoon ground cinnamon and clove
3 cups all purpose flour
3 teaspoons baking powder
 
Syrup:
    1 cup sugar
    1 tablespoon honey
    1/2 cup water
    1 tablespoon lemon juice

Preheat oven to 350° F.

In a large bowl, start beating the olive oil with sugar and add the egg yolks, cinnamon and clove powder, walnuts, baking powder diluted in milk and the flour, stirring the mixture continuously. In the end, add the egg whites which have been beaten very well and combine very carefully. Pour the mixture in an oiled baking tin and bake it for about 1 hour. Remove the cake from the oven and let it cool down a bit.

Prepare the syrup: Put the sugar, honey, water and lemon juice in a pot and boil for 10 minutes. Pour the hot syrup over the warm cake.

(If desired, you can prepare a cream with milk and corn flour, spread it on top of the walnut cake and sprinkle with chopped walnuts.)
