Raisin cake
1 1/2 cups Sitia Extra Virgin Olive Oil 1 1/2 cups sugar 2 cups fresh orange juice 1 teaspoon orange zest 2 teaspoons baking soda 1 cup liquid from boiled cinnamon in water 1/4 cup brandy 2 teaspoons baking powder 1 tablespoon ground cinnamon and clove 1 cup seedless raisins 1/2 cup walnuts, coarsely ground (optional) 2 1/4 lbs all purpose flourPreheat oven to 350° F.
In a large bowl start beating the olive oil and sugar, and then add the boiled cinnamon liquid, baking soda diluted in orange juice, baking powder diluted in brandy, cinnamon and clove powder, orange zest, walnuts (optional), raisins and finally the flour, working the mixture as you go along. Transfer the mixture into an oiled baking tin and bake in the oven for about 1 hour and 20 minutes.
