Yogurt cake

1/2 cup Sitia Extra Virgin Olive Oil
1 cup sugar
5 eggs
1/2 lb yogurt (preferably strained yogurt)
1 1/2 cups flour
3 teaspoons baking powder
1 teaspoon lemon zest

Preheat oven to 350° F.

Beat the olive oil with sugar and continue by adding yolks, lemon zest, yogurt, flour sifted with baking powder and finally egg whites beaten stiff. Combine very carefully and transfer the mixture into an oiled baking tin. Bake in the oven for about 1 hour.
