Carrot cake

1/2 cup Sitia Extra Virgin Olive Oil
1/2 cup sugar
1 tablespoon ground cinnamon
1 teaspoon orange zest
3/4 cup fresh orange juice
1/2 cup grated carrot
1/2 cup grated apple
3/4 cup seedless raisins
1/2 cup walnuts, coarsely ground
4 tablespoons brandy
1 1/2 cups all purpose flour
2 teaspoons baking powder

Preheat oven to 350° F.

Beat the olive oil with sugar, add cinnamon powder, orange zest, orange juice, carrot, apple, raisins, baking powder diluted in brandy and finally the flour. Combine well.

Brush a baking pan with olive oil, pour mixture into it and bake for about 1 hour.
