Orange biscuits

2 cups Sitia Extra Virgin Olive Oil
2 cups sugar
1 cup fresh orange juice
1 tablespoon ground cinnamon and clove
1 tablespoon baking powder
1 teaspoon baking soda
2 1/4 lbs all purpose flour

In a large bowl, beat the olive oil and sugar until creamy. Add cinnamon and clove powder, baking soda diluted in orange juice and finally the flour sifted together with the baking powder, stirring constantly until a dough begins to form. Knead well until the dough is soft and elastic and doesn't stick to your hands. Cover with a towel and refrigerate for half an hour.

Shape the biscuits by taking pieces of dough the size of a walnut and roll into a rope. Join the ends to form circles and place them on a cookie sheet. Bake in moderate heat (350° F) for 20 minutes until golden brown.
