Semolina pudding (Chalvas)
1 cup Sitia Extra Virgin Olive Oil 2 cups fine semolina 2 1/2 cups sugar 4 cups water 1/2 cup seedless raisins (optional) 1 tablespoon ground cinnamon 1/2 cup roasted chopped walnutsIn a pot, over medium heat, bring water and sugar to a boil and simmer for 10 minutes. Remove from heat, add raisins and let the syrup cool slightly.
In a large pot, heat olive oil until it begins to sizzle. Slowly add semolina, stirring constantly for about 10 minutes with a wooden spoon until semolina is lightly brown. Add walnuts and then the syrup very slowly, stirring constantly and being careful not to burn yourself as the mixture will bubble. Stir over low heat for about 10 minutes, until the syrup is completely absorbed by the semolina. Remove from heat and pour the pudding in a large mold or in several small ones. Sprinkle with ground cinnamon and walnuts, if desired.
