Olive oil biscuits (Koulourakia)
3 cups Sitia Extra Virgin Olive Oil 2 cups sugar juice of 1 medium orange and 1 lemon 1 tablespoon ground cinnamon 5 tablespoons brandy 2 teaspoons baking powder 1 teaspoon baking soda 1 cup roasted sesame seeds 2 1/2 lbs all purpose flourIn a large bowl, beat the olive oil and sugar until creamy. Add baking soda diluted in the juice, cinnamon, baking powder diluted in brandy and sesame seeds, beating the mixture along the way. Slowly sift the flour as much as needed until the dough is soft and elastic. Cover the dough and put it in the refrigerator for 30 minutes.
Take pieces of dough the size of a small walnut and roll into a rope. Join the ends to form circles and place the biscuits on a baking sheet. Bake in moderate heat (350° F) for 20 minutes, until golden brown.
