Yogurt and carrot dip

3 - 4 tablespoons Sitia Extra Virgin Olive Oil
1 lb carrots
2/3 lb strained yogurt
2 mashed garlic cloves
1 teaspoon salt
1 tablespoon lemon juice
1/2 cup roughly ground walnuts (optional)

Grate (or grind) the carrots. Whip yogurt with the remaining ingredients, adding the carrots and mixing well.
