Taramosalata (Cod roe dip)

1/2 cup Sitia Extra Virgin Olive Oil
1/4 lb taramas (cod roe), preferably white
1/2 lb stale bread
2 - 3 medium boiled potatoes
4 tablespoons lemon juice
1 small grated onion (optional)

Soak the bread in water, then squeeze to get rid of the water. Combine cod roe, potatoes, bread and onion in a mixer. Slowly add olive oil and lemon juice alternatively until the dip becomes soft and creamy. Garnish with olive and parsley.
