Chick pea croquettes
Sitia Extra Virgin Olive Oil (for frying) 1 lb chick peas 2 egg yolks 4 tablespoons of ground toasted bread (or dried rusks) 1/2 cup finely chopped parsley 1/2 cup grated cheese (optional) flour salt and pepperSoak chick peas overnight and the next day drain and rub them to remove husks. Rinse with cold water and then boil them in a pot until soft. Drain again and place in a food processor along with 2 - 3 tablespoons of the water from boiling. Grind for 2 - 3 minutes, add the other ingredients and grind to combine them well. Taking a tablespoon of mixture at a time, shape into croquettes. Dredge in flour and fry them in olive oil. Serve alone or with tomato sauce.
You can also make croquettes with different pulses (split peas or a combination of different pulses, like dried beans, broad beans, chick peas and split peas) following the same instructions as above.
