Ground wheat pilaf with tomato sauce

1/2 cup Sitia Extra Virgin Olive Oil
1 lb ground wheat
2 medium onions, finely chopped
2 zucchinis, finely chopped
1 medium potato, finely chopped
1 lb ripe tomatoes, peeled, seeded and chopped
6 cups water or meat stock
salt and pepper to taste

Wash and drain the ground wheat: Put in a large bowl with hot water to cover it, add 2 tablespoons salt and when water gets cold, place the ground wheat in a colander and rinse it thoroughly.

In a pot, heat olive oil and soften the onions until translucent. Add the zucchinis, potato and tomatoes and stir for 5 minutes. Pour 6 cups water or meat stock and when it comes to a boil, add the ground wheat. (The ratio of water to ground wheat should be 2:1) Reduce heat to low and simmer until the water is absorbed and the ground wheat softens, about 20 minutes, stirring often to prevent it from sticking to the bottom of the pot. Serve sprinkled with grated cheese, if desired.
