Beef stew

6 tablespoons Sitia Extra Virgin Olive Oil
2 1/4 lbs beef
1 lb pearl onions or large onions sliced into thin rings
3 garlic cloves
2 tablespoons vinegar
1 teaspoon pimento
1 cinnamon stick
salt and pepper

Wash beef and cut into cubes.

Heat olive oil in a saucepan, add meat and cook on medium heat until juice is evaporated. Add onions and whole cloves of garlic and soften for 5 minutes. Stir in vinegar, salt, pepper, pimento, cinnamon and 3 cups warm water. Cover and simmer for 2 hours, until meat is tender.
