Roasted lamb with tomato sauce

6 tablespoons Sitia Extra Virgin Olive Oil
2 1/4 lbs lamb
2 1/4 lbs potatoes, peeled and cut into quarters
1 lb tomatoes, cut into slices
juice of 1 lemon
2 - 3 bay leaves
salt and pepper to taste

Wash lamb, cut into serving pieces, dry and baste with lemon juice. Place in a baking tray, season with salt, pepper and 3 tablespoons olive oil. Place potatoes all around meat, season again with salt and pepper. Place bay leaves among potatoes and drizzle remaining olive oil. Top with tomato slices, pour 1/2 cup water and bake in moderate heat for about an 1 1/2 hours, turning the meat over half way through.
