Meat with spinach in tomato sauce
6 tablespoons Sitia Extra Virgin Olive Oil 2 1/4 lbs of meat (lamb or veal) 2 1/4 lbs spinach 2 medium onions, finely chopped 1 lb ripe tomatoes, peeled, seeded and chopped salt and pepper to tasteWash meat and cut into cubes. Heat the oil in a saucepan and soften the onions until they take on a little color. Add meat and turn a few times on all sides to color evenly. Stir in tomatoes, 1 cup water and cook gently for about 50 minutes.
In the meantime, wash and chop the spinach. When meat is almost cooked, stir in spinach, salt and pepper and continue cooking until almost all liquid has been absorbed.
