Chicken in wine

1/2 cup Sitia Extra Virgin Olive Oil
1 medium-sized chicken
2 medium onions, finely chopped
3 cloves of garlic, coarsely chopped
2 cups red wine
1 lb ripe tomatoes, peeled, seeded and chopped
salt and pepper to taste

Cut the chicken into serving pieces, wash well and pat dry with kitchen towel. In a large stewing pot, heat olive oil and brown onion for 3 minutes. Continue with chicken until juice is evaporated, turning frequently on all sides. Add garlic, wine and 2 cups warm water and simmer until chicken is half cooked. Add tomatoes, salt and pepper and continue cooking for another 30 minutes. Serve with plain rice, with roasted or fried potatoes or with noodles.
