Pork with potatoes and coriander
4 - 5 tablespoons Sitia Extra Virgin Olive Oil 1 lb boneless pork 4 medium potatoes 4 cloves of garlic, finely chopped 3/4 cup red wine 2 tablespoons coriander salt and black pepperCut pork into cubes, wash and place in a large bowl. Make marinade by combining garlic, wine, coriander, salt and pepper. Pour over pork, cover and put the bowl in a cool place for at least 4 hours. Turn the pork pieces on all sides from time to time to marinate fully. In the meantime, peel, wash and quarter the potatoes and put them aside.
Heat olive oil in a saucepan. Remove pork from marinade with a slotted spoon and put in the pot turning frequently to brown lightly. Add marinade to pot, reduce heat and simmer until half done, adding water if needed. Add potatoes, a little salt and continue cooking for about half an hour, adding more water again, if needed.
