Pork or lamb with prunes

3 - 4 tablespoons Sitia Extra Virgin Olive Oil
3 1/4 lbs pork or lamb
1 medium onion, finely chopped
1 cinnamon stick
5 - 6 whole cloves
juice of 2 lemons
1 lb pitted prunes
1/2 cup almonds
2 tablespoons sugar or honey
salt, pepper and a little nutmeg

Wash the meat and cut into cubes. Place it in a large bowl and add onion, salt, pepper, nutmeg, cinnamon, cloves and lemon juice. Allow it to marinate for at least 1 hour. In the meantime, soak prunes in water. Soak almonds in hot water, peel, roast and put aside.

Heat olive oil in a large pot, add meat and cook until juice has evaporated. Pour in marinade along with 1 - 2 cups lukewarm water and simmer until meat is soft enough, about 1 hour. Add prunes, almonds and sugar or honey and continue cooking for 10 more minutes. Serve warm.
