Meat soup with vegetables

4 tablespoons Sitia Extra Virgin Olive Oil
1 lb meat (lamb or veal)
2 large onions, sliced into thin rings
2 celery roots, sliced into 3/4 inch rings
2 leeks, sliced into rings
2 medium carrots, cut into cubes
3 - 4 medium potatoes, cut into cubes
salt

Wash the meat and cut into small cubes. Put in a soup pot with water to cover it. Add salt and bring to a slow boil, skimming foam off the top from time to time. Simmer until meat is almost ready.

In another saucepan, heat olive oil, soften onions until they get a little color and add celery, leeks, carrots and finally potatoes, stirring for 10 - 15 minutes. Season with salt and transfer into the pot with meat, add some more water if it is not enough, and continue cooking for another 15 - 20 minutes.
