Meat with ground wheat in the oven

4 - 5 tablespoons Sitia Extra Virgin Olive Oil
2 1/4 lbs meat (pork, lamb or goat)
1 lb ground wheat (chondros)
1 medium onion, finely chopped
3 ripe tomatoes, seeded and grated
salt and pepper to taste

Wash and drain the ground wheat: put in a large bowl with hot water to cover it, add 2 tablespoons salt and when water gets cold, place the ground wheat in a colander and rinse thoroughly.

Wash the meat, cut into cubes and place in a baking tray or ovenproof dish. Add the ground wheat, onion, tomatoes, olive oil, salt and pepper. Add 7 cups water or meat stock, cover pan with aluminum foil and bake in moderate heat for 2 hours. Near the end of cooking time, uncover and bake for another 15 minutes.
