Baked fish with bell peppers
6 tablespoons Sitia Extra Virgin Olive Oil 1 large whole fish (pike, red snapper, mullet, monkfish) 3 tablespoons parsley, finely chopped 2 medium onions, sliced into thin rings 2 garlic cloves, finely chopped 1 lb medium tomatoes, peeled, seeded and chopped 1 lb bell peppers, sliced into rings 1/2 cup white wine juice of 1 lemon salt and pepperCombine the onions, peppers, tomatoes and garlic and place in an oiled baking tray. Clean the fish, remove the guts, stuff with parsley and place in the baking tray. Season with salt, drizzle with olive oil, wine and lemon juice and bake in moderate heat for about 1 hour.
