Baked fish with vegetables and rosemary
4 tablespoons Sitia Extra Virgin Olive Oil 1 large whole fish (grouper, red snapper, pike, bream or mullet) 3 sun dried tomatoes 2 - 3 bay leaves 3 tablespoons parsley, finely chopped 3 - 4 medium onions, sliced into thin rings 2 garlic cloves, finely chopped 1/2 cup white wine 3 medium tomatoes, peeled, seeded and chopped 1 teaspoon rosemary 1/2 cup black olives (optional) salt and pepperClean the fish, remove the guts and stuff it with parsley, bay leaves and sun dried tomatoes. Place in an oiled baking tray in one layer. In a saucepan, heat the olive oil and brown the onions lightly. Add garlic, tomatoes, wine, rosemary, olives, salt and pepper and simmer for 5 minutes. Pour the sauce over and around the fish and bake in moderate heat for about one hour.
