Baked mackerel with raisins and walnuts
5 tablespoons Sitia Extra Virgin Olive Oil 3 lbs mackerel fish or trout 2 medium onions, finely chopped 2 - 3 garlic cloves, finely chopped 1 lb tomatoes, peeled, seeded and chopped 1/2 cup seedless raisins, soaked in water for 30 minutes 1/2 cup walnuts, coarsely ground salt and pepperClean the fish, remove guts, season with salt and place in a baking tray in one layer.
Combine tomatoes, onions, garlic, raisins, walnuts, salt and pepper and stuff the fish with this mixture. Spread the rest of the mixture on top of the fish, drizzle with olive oil and bake for 50 - 60 minutes.
