Bream with celery
1/2 cup Sitia Extra Virgin Olive Oil 2 1/4 lbs medium size bream fish 2 1/4 lbs celery, coarsely chopped 2 medium onions, finely chopped 2 eggs juice of 2 lemons salt and pepperClean, gut and wash fish. Season with salt and keep in the fridge.
Wash celery and put in large pot with boiling water for 5 minutes. Drain and leave aside.
In a saucepan, heat olive oil, brown onions for 3 - 4 minutes and add celery, salt and pepper. Cover with warm water and simmer for about 25 - 30 minutes. Place the fish on top of celery and continue simmering for 20 more minutes, without stirring but just shaking the pot from time to time to prevent the food from sticking to the bottom of the pot.
When food has been cooked, prepare the egg and lemon sauce: beat the eggs (first the whites and then the yolks) with the lemon juice until frothy. Add a few ladles of liquid from the pot beating constantly until the egg and lemon mixture is warm. Remove the pot from the heat, pour in the egg mixture and stir well.
